Having a Busy Week!
This has been a busy week. In the news and in our household. Have been searching for a new house. Looked at 4 already. Want one that is out in the country. One was the right size , but had no trees or anything else around. The other had trees and even water , but was way too small. Smaller than what we are in now. So , we are still on the hunt.
Planning out yard sales for this Saturday. My mom is coming from out of town just so that we can go to some here. She had never been to any where I live. It is going to be fun. I have a list of what I am looking for. Camping gear, tools, books, games, puzzles, and anything else that would be useful. Won't have a lot of money , but should be fun. Don't get to see my mom to often. I will share any treasures that I find next week.
Need to get to Walmart sometime this week and get some more of that Bear Creek Soup to add to stockpile. I also have added 2 more bottles to out Culligan order. It is only 25.00 a month and it is good water. Our city water here is awful. EPA is here all of the time over it. Just awful. Pretty bad that we have to have water shipped in from another town to have water to drink. But, water is a need so it is worth it.

Frugal & Fast Recipe - Quick Italian Chicken & Rice
Here is a bit of a fancier dish. It is very easy to make though and a quick one.
Quick Italian Chicken & Rice
2 Tablespoon of veggie oil
1 12 to 14 ounce package of chicken breast tenders that are unbreaded
1/2 teaspoon of italian seasoning
1 can of italian style stewed tomatoes, undrained. Canned tomatoes of all kinds should be plentiful in your food storage. They can be used for so many things.
3/4 cup of water
1 1/2 cups of uncooked instant rice
In a skillet heat up the vegetable oil and put the chicken that you have seasoned all over with the italian seasoning into the oil. Cook it, while stirring it constantly, until it is browned and not pink in the center.
Add the tomatoes and water to the same skillet with the chicken. Heat to a boil and then add the rice. Cover and remove from the heat. Let this stand covered for about 5 minutes or until the liquid is totally absorbed. Get some garlic bread and serve.

shredded cheddar cheese .
In a large skillet cook the potatoes, onion, and peppers in oil stirring constantly. Add the SPAM and cook more time , I cooked it until the potatoes were tender. In a bowl mix the eggs and all of the seasonings. Pour this mixture over th emixture in the skillet and cover. Cook this on low medium heat until the eggs are set. Sprinkle the cheese over it and remove from heat and serve. I served this with homemade biscuits. It was very good. I think this would be excellant as a dinner also. Mix it up anyway you want.
