Food Storage Recipe - Spam Breakfast Skillet

WOW! I made this for the first time on Sunday and realized quickly that I should have made more of it. We ate it up quick. It was easy to make and it is a pretty frugal breakfast also.

2 cups of diced potatoes

1/2 cup of diced onions, I used my dehydrated diced onions in this and it worked great. I love those things. I need to buy another can of them already. I use those onions in everything.

1/2 cup of bell peppers - I also used my freese dried green peppers that I got from Emergency Essentials and LOVE!

2 teaspoon oil

1 can of SPAM cut into julienne strips

4 eggs

dash of salt

dash of pepper

shredded cheddar cheese .

In a large skillet cook the potatoes, onion, and peppers in oil stirring constantly. Add the SPAM and cook more time , I cooked it until the potatoes were tender. In a bowl mix the eggs and all of the seasonings. Pour this mixture over th emixture in the skillet and cover. Cook this on low medium heat until the eggs are set. Sprinkle the cheese over it and remove from heat and serve. I served this with homemade biscuits. It was very good. I think this would be excellant as a dinner also. Mix it up anyway you want. My son said that mushrooms might be good in it to. HMMMM Maybe next Sunday.
