Food Storage Recipe - Ravioli Lasagna

Things get tight sometimes - a lot here lately- BUT, we still want to eat different things. I pick these frozen ravioli up at the Dollar Store and we love them. This easy recipe is also frugal.

2 jars of marinara sauce

2-3 packages of frozen ravioli , thawed

1 jar of roasted red peppers , drained and chopped

1 package of shredded mozzarella cheese

1/2 cup of shredded Parmesan  cheese

Preheat the oven to 400 degrees.

Spray a 13X9 baking dish with cooking spray.

Spread about half of one of the jars of marinara sauce in the pan.

Arrange a layer of about half of the raviolis onto the sauce and top with about half of the peppers.  Then spread the rest of the sauce over that.

Sprinkle with about half of the mozzarella and Parmesan cheese.

Repeat the layer.

Cover with foil and bake for about 35 minutes. Uncover and bake another 10 to 15 minutes, until the cheese is melted and sauce is bubbly.

Sprinkle with the rest of the Parmesan cheese.

Serve with garlic bread.

1 package piecrust mix for 2 crust pie (Jiffy)

1 21 oz. can of Apple Pie Filling

Prepare the piecrust mix as the box states. On a lightly floured surface roll the dough out to about 1/8 inch thick. Cut it into 6 inch circles. Re-roll remaining dough and cut it into 6 inch circles.

In a bowl combine the pie filling and the cinnamon. Place about 1/4 a cup on half of each circle. Fold empty side over the filling and seal the edges with fingers or a fork.

In a heavy skillet heat the oil and fry the pies in it for a few minutes. Until golden brown.

Sprinkle them with powdered sugar after you remove from the oil.

Food Storage Recipe - Oatmeal Milk Frozen Coffee

We love making and drinking Oatmeal Milk! My daughter takes it and makes these frozen coffee drinks that are absolutely delicious!! Plus saves you the money that you would have spent on a frappe out of the home. They are over $3.00 , so if you buy one everyday that is at least $20.00 a week that you are saving. They can be even more at some places.

All you need is 1 cup of coffee that you had frozen.

2 cups of your homemade oatmeal milk

1 cup of ice

Put all of this in the blender and turn it on high.

Blend until the ice is all blended up well.

Pour into your big cup and enjoy.

These are extra good in the summer , but we drink them all year long. We also enjoy ice cream more in the winter also.

What types of "summer" foods do you enjoy in the winter???
