Food Storage Recipe ~ POTATO PANCAKES


Great recipe to use up extra mashed potatoes.

NEED 

4 cups cold mash potatoes
5 slices bacon
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 eggs well beaten
1/2 cup shredded cheddar cheese

Place the bacon in a large, deep skillet, cook over medium-high heat, turning occasionally, until evenly browned and crisp about 10 minutes.
 
Remove the bacon slices, crumble set aside.
 
Leave the bacon drippings in the skillet.
 
Mix mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl;
stir in the crumbled bacon and Cheddar cheese.
 
Form the mixture into 8 patties.
 
Heat the bacon drippings over medium heat,
pan-fry the patties in the drippings until crisp on each side,
about 4 minutes per side.

Food Storage Recipe - Zucchini Lasagna

Zucchini Lasagna
 NEED

3 large zucchini, sliced lengthwise into 1/4 inch thick strips
1 tablespoon olive oil
1 pound ground beef
1/2 medium onion, finely chopped
2 cloves garlic, minced
1 cup marinara sauce
1 cup ricotta cheese
1 large egg
1/2 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
Salt and pepper, to taste
Fresh basil leaves, for garnish

Preheat your oven to 375° and lightly grease a 9x13 inch baking dish.
 
Heat olive oil in a skillet over medium-high heat. Add the onion and garlic, sautéing until fragrant. Toss in the ground beef, breaking it apart until browned. Season with salt and pepper to taste.
 
Stir in the marinara sauce and let the mixture simmer for 10 minutes.
 
Meanwhile, in a separate bowl, mix together ricotta, egg, Parmesan cheese, and a pinch of salt and pepper.
 
Grill or roast the zucchini strips until just tender, about 2 minutes per side, to remove excess moisture.
 
 In the baking dish, lay down a layer of zucchini strips, followed by a layer of the beef sauce, dollops of the ricotta mixture, and a sprinkle of mozzarella cheese. Repeat the layers until all ingredients are used, finishing with mozzarella.
 
Bake in the oven for about 25 minutes, or until the top is golden brown and bubbly.
 
Let the lasagna rest for a few minutes, then garnish with fresh basil before serving.

NEED

- 🍓 1 cup fresh strawberries (hulled and chopped)

- 🥛 1/2 cup plain Greek yogurt (unsweetened)

- 🍯 1 tablespoon honey (optional)


1. Blend the strawberries until smooth.

2. Mix the strawberry puree with Greek yogurt and honey (if using).

3. Spoon the mixture into bone-shaped silicone molds or ice cube trays.

4. Freeze for at least 3 hours or until solid.

5. Pop out the bites and let your dog enjoy this cool treat.


Servings: Varies based on mold size


Prep Time: 10 minutes


Freeze Time: 3 hours


Storage: Keep in the freezer for up to a month. Enjoy! 🐕

Food Storage Recipe - Fun Yummy Pasta


 Creamy and cheesy pasta dish that is quick to make. Family will eat it all. 

Need:

1 box of rotini noodles

1 can of chicken

1 can Ro-tel 

Use the can from the Ro-tel for a can of milk

1 can of cream of chicken

16 ounces of velveeta cheese

Cook the noodle as directed on box.

Set aside and in a pan cook the cheese, soup, milk, and Ro-tel.

Once the cheese has melted and everything is mixed together add the chicken and noodles. 

Mix it up well and serve.

Homemade Dairy Free Whipped Cream

 

Chill a can of coconut milk in the fridge overnight. Do Not freeze.

Scoop the hardened cream out into a bowl.

Whip with a hand mixer or a stand mixer until light, fluffy peaks form.

Add a bit of vanilla or some sweetener to it if you would like.

Food Storage Recipe - Skillet Dinner



This is a great one skillet dinner that is low cost and easy!!

 Skillet Dinner

1 pound of ground beef OR use the Taco Mix TVP from augason farms. Make sure that you reconstitute it FIRST!! It is awesome in this dish. and chili!!

1 jar of salsa

1 and a half cup water

1 envelope of taco seasoning

1 cup of uncooked instant rice

Cook and drain your ground beef or do your Taco Mix. Than add all of the other ingredients. Bring it to a boil and then reduce it to a low and let it simmer until the rice is tender.

YUMMY serve it with shredded cheese on top with crunched up tortilla chips. You can also have lettuce , sour cream, etc with it.

Food Storage Recipe - Cowboy Casserole

 

You can customize this for your liking. I sometimes just use canned diced tomatoes. You can add jalapenos etc

NEED:

1 pound ground beef

Half a diced onion

1 can ranch style beans 

1 can of Ro-Tel

1 can of corn , drained

1 can cream style corn

2 boxes of Jiffy Cornbread mix   

Preheat the oven to 400 degrees.

In a large pan cook up the ground beef with the diced onions and some seasonings. I use garlic powder, chili powder, salt , and pepper.

Break the ground beef up very well and then drain.

Pour beans, Ro-tel, and corn into the well drained ground beef and bring to a boil.

While that is cooking mix up the cornbread mixes as the box says to do them. Add the cream style corn to this cornbread and mix together well.

Place the ground beef mixture into a casserole baking dish and cover the top with the cornbread mixture.

Bake for about 30 minutes. Until the cornbread is golden and done.

Serve this dish. You can top with shredded cheese etc

Food Storage Recipe - Quick Italian Tomato Sauce


 NEED:

1 (28 ounce) can crushed tomatoes
1/2 medium white onion, diced
2 medium carrots, peeled and finely diced
4 medium garlic cloves, crushed
1 tablespoon sugar
3 tablespoons extra virgin olive oil
2 tablespoons fresh basil, finely chopped
1/4 cup Italian parsley, finely chopped
1 teaspoon kosher salt
1 teaspoon black pepper

Heat olive oil in a medium sauce pot over medium-high heat.
 
Add carrots, onions, salt, and pepper, and sauté until onions are translucent and carrots are softened.
 
Add garlic and cook until garlic is lightly browned, about 2 minutes.
 
Turn heat up to high and pour crushed tomatoes into the pan.
 
 Stir in basil.
 
 Bring to a simmer, stirring often. 
 
Stir in sugar and reduce heat to simmer, cooking for 5-7 minutes or until thickened.
 
Stir in parsley and continue to simmer for 5 minutes.
 
 Remove from heat and serve. Serve with pasta.

Yummy Smoothies From Dollar Tree


 I had to go to Dollar Tree this morning for some items and for the first time in a few months they actually had stuff in the freezers! They have actually been sitting empty. I looked through it all and found some items to get. Even these 2 bags of smoothie starters. They are so yummy and down the aisle from the freezer they has mange juice and almond milk. I will get out my Magic Bullet Blender and have a yummy treat.


So $1.25 for each item. Would be a great healthy snack or breakfast. Frugal and healthy. I don't get to Dollar Tree to often , but if I can get something that is healthy when I do go there that would be worth it.

 These are a tasty treat for your dog. They are full of vitamins and fiber. 

𝐒𝐰𝐞𝐞𝐭 𝐏𝐨𝐭𝐚𝐭𝐨 𝐚𝐧𝐝 𝐒𝐩𝐢𝐧𝐚𝐜𝐡 𝐁𝐢𝐬𝐜𝐮𝐢𝐭𝐬 𝐟𝐨𝐫 𝐃𝐨𝐠𝐬

NEED:

 

1 cup mashed sweet potato (cooked and cooled) 
- 1/2 cup fresh spinach, finely chopped 
- 1 egg 
- 1 cup whole wheat flour 
- 1/4 cup rolled oats 
 
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
 
In a large bowl, combine the mashed sweet potato and chopped spinach.
 
Add the egg and mix until well combined.
 
Gradually add the whole wheat flour and rolled oats, mixing until a dough forms.
 
Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
 
Use a cookie cutter to cut out shapes from the dough and place them on the prepared baking sheet.
 
Bake in the preheated oven for 20-25 minutes, or until the biscuits are firm and lightly golden.
 
Allow the biscuits to cool completely before serving.
 
Store any leftovers in an airtight container.
