Prep Of the Week - Freezing Eggs

Having eggs on hand is a must. Egg prices where I live are getting so high. I decided to grab a few cartons of them and freeze them. Whenever eggs do go on sale , buy as many as you can and do this.

It is easy to do and can really help with recipes or making scrambled eggs.

Get out your muffin pans and spray them lightly with some no stick spray.

Break an egg into each space and whisk them up a bit.

Cover the pan with plastic wrap and place in the freezer.

When they are frozen completely , take them out of the pans, and put into freezer bag.

When you need to use them just pull out as many frozen eggs as you need. Easy to use - 1 frozen egg is just 1 egg!!

They can last a while. Up to a year. But, you will probably use them all up way before then.

If you can get unwashed eggs from a farm, put them in a saturated solution of Pickling Lime. They keep for at least a year.
