Car Camping

I had been looking for a couple of years for a rv, van, or suv that we could use for camping. I was so sad when my son hit a deer with my astro van. FINALLY , this past weekend I found something. A Honda Odyssey!! It has 3 row seating so I am thinking that we will take out the middle row and see if that can work. Could take out the third row if we have to. Trying to travel with a dog in a car was difficult. Hopefully he will like this better with a dog bed, etc.

I have had a Pinterest Board for all things tiny houses and DIY campers for years. Now I can finally use some of the ideas, tips, and tricks.Have been picking up things for a while that would be used for camping and could make a camper.

Surprisingly this mini-van has a lot of room! I will be able to make it comfortable. The only thing I think that I will get special for this and be the 1 big expense - will be a ECOFLOW Solar Generator! I have one for the house and love it. Works amazing when the power goes out. Keeps my fridge going etc. This would be a must-have for car camping!

I will share my progress as I go along.

Please share any links etc to anything that you could think of for making car camping easier and more comfortable.

Food Storage Recipe - Sausage Potato Sheet Pan Meal

                                                             Sausage Potato Sheet Pan Meal

This is a simple recipe , but VERY tasty.

Slice some Polska kielbasa.

Cut up some potatoes and onion.

Add some carrots and seasonings.

I used Sicilian Blend Italian seasoning, Salt & Pepper.

Throw all of this onto a sheet pan with some oil and bake until potatoes are done and kind of crispy.

I also added a few pats of butter to add to the taste.
