In the winter I love soups. Really I like them year round, but in the winter I could eat soup every day. This is one of my favorites. It is easy and pretty frugal to make.
CHUNKY MINESTRONE SOUP
1 can of kidney beans
1 can of diced tomatoes that has basil , garlic, and oregano added to them
1 cup of broken up uncooked egg noodles
1 stalk of celery, sliced up
2 cans of beef or chicken broth, whichever you have on hand
1 can of sliced carrots, drain them.
Mix all of the ingredients together except the carrots. cover and simmer for about 15 minutes.
Add the carrots and simmer a few more minutes . serve with a warm sandwich or just warm bread.
