The easiest recipe for salsa!!
A can of diced tomatoes (always in the food stockpile)
Dice some onion and green pepper.
Add about a teaspoon of minced garlic.
A tablespoon of lime juice.
Salt and pepper
Small bit of chopped up cilantro.
A small bit of red pepper flakes.
My blender broke so I had to just use my hand held potato masher. It worked pretty good.
It will be chunky salsa.
YUMMY!
I have been waiting for months for the inergy solar generator that I ordered. So, I was tired of waiting and getting worried that I would not have at least something soon, I ordered a EF ECOFLOW Portable Power Station Delta 1000. It came really fast and already charged.
I had gotten a small 3.2 Cubic Foot Mini Fridge With Freezer that I had just sat in my kitchen. Hooked it up to this and it started right up!! As you can see in the photos - it says that with the fridge hooked up and running it would have 16 hours.
This is a must have item. This should run lights, fridge, wi-fi, etc.
Over the next few weeks I will test more items with it and make update post.
Having eggs on hand is a must. Egg prices where I live are getting so high. I decided to grab a few cartons of them and freeze them. Whenever eggs do go on sale , buy as many as you can and do this.
It is easy to do and can really help with recipes or making scrambled eggs.
Get out your muffin pans and spray them lightly with some no stick spray.
Break an egg into each space and whisk them up a bit.
Cover the pan with plastic wrap and place in the freezer.
When they are frozen completely , take them out of the pans, and put into freezer bag.
When you need to use them just pull out as many frozen eggs as you need. Easy to use - 1 frozen egg is just 1 egg!!
They can last a while. Up to a year. But, you will probably use them all up way before then.
Just an easy recipe that is quick to cook! Doesn't use a lot of items and fills everyone up.
I used red potatoes from my garden - use as many as you want.
Half of a package of those mini smoked sausages that I cut into thirds.
A hand full of the frozen 3 pepper /onion blend.
I used some of my bacon grease and fired this all up - when the potatoes were done I threw some shredded cheese on and served!!
Got a bit of lettuce and some red potatoes out of the small garden that I have. I have so many items planted and growing. Waiting impatiently for the zucchini! Have so many ideas for them. We have already ate some radishes out of the garden and planted more. Starting a garden had been the best thing I have done this year. Learning a lot , too. Next year will make sure the lettuce is in bigger rows and not so close together. I knew that I did not have a lot of room and got some Tom Thumb Lettuce , I think that is what it is called, BUT, I still think they need more room. A great learning experience and each year the garden will get better and better!
